Tenderloin is the muscle that does the least work, and it shows. No chew, no sinew, nothing to fight through — just clean, buttery beef that cuts with the side of a fork.
These are grass-fed, hand-slaughtered Zabiha halal tenderloin steaks from Thomas Farms, cut into small steaks and vacuum sealed two to a pack. Because they're cut thin, they cook fast — three or four minutes a side in a hot pan is all they need.
Season simply. Salt, pepper, high heat, a knob of butter at the end. Tenderloin doesn't need help.
