The smash burger exists to do one thing: maximize crust. When you press a loosely packed ball of ground beef flat against a screaming-hot surface, the fat renders immediately and the exposed surface area creates a Maillard reaction across the entire face of the patty — the kind of deep, caramelized, almost crispy crust you can't achieve with a thick, formed patty cooked at moderate heat. The edges go lacy and slightly crisp. The center stays juicy. Two thin patties with a slice of melted American cheese on each will always outperform one thick patty, and this is why every serious smash burger spot does the double.

We use Thomas Farms Organic Zabiha Halal Grass-Fed Ground Beef 85/15 — certified organic, grass-fed, and the cleanest ground beef we carry. The 85/15 fat ratio is exactly what a smash burger needs: enough fat to develop an extraordinary crust and stay juicy, not so much that it pools in the pan. One pound makes two generous double smash burgers.

The smash is everything — do it hard and do it fast: The smash must happen within the first 10 seconds of the ball hitting the pan, while the fat is still cold and the beef hasn't started cooking. Once the exterior begins to set, smashing tears the patty instead of spreading it. Press hard, flat, and immediately — then don't touch it until the crust has fully formed.

For the burgers

Do not season before smashing: Season the ball of beef right before it hits the pan — salt draws out moisture, and a pre-salted ball will not smash as flat or develop as clean a crust. Salt goes on the top surface the moment the patty is in the pan, right before you smash.

Why organic 85/15 specifically: The organic certification means no synthetic pesticides or fertilizers in the feed. The 85/15 ratio is the smash burger sweet spot — leaner and the crust won't have enough fat to caramelize; fattier and the edges won't crisp the way they should.

Smash burger sauce

For the build

American cheese is not optional: It's specifically engineered to melt at low temperatures into a uniform, glossy sheet. Sharp cheddar or fresh mozzarella will not melt the same way on a thin patty in 45 seconds. For smash burgers, American cheese is the right call every time.

Instructions

Phase 1 — Prep

    Make the sauce and prep toppings

    Mix all sauce ingredients together and refrigerate. Shred the iceberg, shave the onion paper-thin, and have the pickles, cheese, and buns ready to go. Smash burgers cook in under 2 minutes per patty — everything needs to be staged before the griddle heats up or the burger is done before you're ready.

    Portion the beef into loose balls — do not pack them

    Divide the beef into 4 equal portions — approximately 4oz each. Roll each loosely into a ball. Do not compact or form them. A loosely held ball smashes flat more evenly and develops a more irregular, lacy edge.

Phase 2 — Smash and cook

    Get the griddle or cast iron absolutely screaming hot

    Heat a large cast-iron skillet over the highest heat for 3-4 minutes. Add a thin layer of oil. The surface should be smoking. This is the most important step — a surface that isn't hot enough produces a pale, steamed patty.

    Place, season, and smash within 10 seconds

    Place a beef ball on the hot surface. Season the top immediately with salt and pepper. Place a sheet of parchment over the ball and press down firmly with a heavy spatula for a full 10 seconds. The patty should be 4-5 inches wide and about 1/4 inch thick.

  3. 5

    Cook undisturbed 2 minutes — then flip once

    Cook without moving for 2 minutes. Flip when the edges have gone brown and lacy. Immediately place a slice of American cheese on each patty. Cook 30-45 seconds more until the cheese is fully melted.

  4. 6

    Toast the buns and build immediately

    Toast brioche buns cut-side down in the residual fat for 30-45 seconds. Build immediately: sauce on both halves, shaved onion on the bottom, double stacked patties, pickles, iceberg, top bun. Serve within 60 seconds.

Variations

Caramelized onion smash

Slow-cook sliced onions 25 minutes until jammy. Place a spoonful on the raw beef ball before smashing — the onion caramelizes into the crust.

Spicy smash

Add 1/2 tsp cayenne to the beef and swap the sauce for sriracha mayo. Top with pickled jalapenos.

Four-cheese smash

One slice each of American and sharp cheddar per patty. The cheddar adds sharpness without sacrificing the melt.

Breakfast smash

Top the double smash with a fried egg and swap the sauce for sriracha mayo. A protein-forward breakfast burger.

Lettuce wrap version

Skip the bun, wrap the double patty in large iceberg leaves with all the same toppings. Lower carb, just as satisfying.

Smash sauce only

The sauce keeps 2 weeks refrigerated and works on everything — sandwiches, fries, chicken wraps. Make a double batch.

Storage

Cook to order

Smash burgers are best served immediately — the crust softens within minutes. Never cook ahead of time.

Freeze raw balls

Portion into balls, freeze on a tray, then bag. Cook directly from frozen — add 60 seconds to the first side. No thawing needed.

Smash sauce

Keeps 2 weeks refrigerated in a sealed jar. Works as a sandwich spread, dipping sauce, or dressing for any burger variation.
