Azeem's 🍔 Classic Smash-Style Organic Beef Burgers with Garlic Aioli

Ingredients
For the patties
- 4 Thomas Farms grass-fed organic ground beef patties (about 4–5 oz / 115–140 g each, 80/20 fat ratio preferred)
 - 1 tsp kosher salt
 - ½ tsp freshly cracked black pepper
 - 1 tbsp butter (for basting, optional)
 
For the garlic aioli
- ½ cup mayonnaise
 - 1 clove garlic, finely grated
 - 1 tsp lemon juice
 - Salt & pepper, to taste
 
For serving
- 4 brioche or potato buns, lightly toasted
 - 4 slices sharp cheddar or your favorite cheese
 - Lettuce leaves
 - Tomato slices
 - Red onion slices
 - Pickles
 
Instructions
1. Make the aioli
- Mix mayo, garlic, lemon juice, salt, and pepper in a small bowl.
 - Cover and chill until ready to use.
 
2. Cook the patties
- Heat a cast-iron skillet or griddle over medium-high heat until hot.
 - Lightly season patties with salt and pepper on both sides.
 - Place patties in the skillet, press down gently for a good sear.
 - Cook 2–3 minutes per side (medium-rare to medium).
 - In the last minute, top with cheese and cover to melt.
 - (Optional) Add butter to the pan and spoon over patties for extra richness.
 
3. Assemble burgers
- Spread garlic aioli on toasted buns.
 - Layer lettuce, tomato, onion, and pickles.
 - Place the cheesy patty on top, close the bun, and serve hot.
 
👉 Variations:
- Add caramelized onions + sautéed mushrooms for a gourmet twist.
 - Go spicy with sliced jalapeños + chipotle mayo.
 - Serve bunless over a fresh salad for a lighter option.
